Quick as a Flash : Ham & Cheese Spinach Bread Quiche

This recipe is OMG delicious and quick as a flash because I use slices of bread (use GF if required) instead of pastry.  Any cooked meat or canned fish like tuna can be used instead of ham and please feel free to use your own chopped fresh veggies.

Lightly grease a slice tin or deep rectangle baking tray and preheat oven to 220.

Butter the bread and lay the slices spread side down in the prepared tin.

Mix together the ham, onion, spinach and half the herbs. Spread over the bread. 

Sprinkle the cheese evenly over the ham and vegetable mixture.

Lightly beat the eggs and milk together.  Season with salt and freshly ground black pepper.

Pour mixture over the sprinkled cheese.

Garnish with the remaining parsley and bake in the oven until golden and crispy.

Serve hot with chips and vegetables, or mash and beans.  Alternatively slice and pop in lunch boxes.  Fabulous for a picnic or camping.



  • 1 tbsp margarine (or butter / flavoured butter)
  • 4 slices bread (gluten free if required)
  • 1 cup ham (cooked chicken) chopped
  • 1 spring onion, finely chopped
  • Handful chopped spinach
  • Handful of fresh or dried herbs, chopped
  • ½ cup cheese, grated
  • 6 eggs, lightly beaten
  • 100 ml milk
  • Salt and freshly ground black pepper

Pantry Essentials

Having access to instant flavour makes cooking so much easier.

Here I’ve created 3 easy go-to’s so you can fast track your prep and get some kai on the table without too much fuss. 

My jars of mixed herbs and spices also mean, you’re able to use up those half, quarter boxes sitting in your pantry taking up space. Create new inspiration and tastes and there’s very little waste.

Jar of Flavour : (please feel free to create your jar based on what’s in your pantry) this is just an example of how to put a jar together:

+          1 jar with lid (or container)

+          half box of herbs, mixed dried or otherwise, like thyme, rosemary, parsley

+          quarter box of spices – like lemon pepper

+          quarter box of spices – like ground cumin

+          quarter box of spices – like paprika


Add more if you like

+          Shake the jar and sprinkle over or in

  • Mince dishes : patties, meatballs, lasagne
  • Dry marinade for meat and BBQ’s
  • A little in salad dressing


Flavoured Marg / Butter

+          1 jar with lid (or container)

+          2 big scoops of butter / marg

+          2 cloves garlic or 2 spoons of minced garlic

+          1 tsp mixed herbs

Mix together, pop in the fridge and use

+          a spoonful in the pan with oil when frying fish or meat

+          BBQ, when meat / fish / veggies is cooking, spread over for extra flavour

+          Oven chips, just at the end of cooking melt 2 tbsp and drizzle over

+          Rice : mix a spoonful in with the water then cook

+          Mashed spuds : use instead of regular butter / marg

+          Baking : like my ham and cheese bread quiche


Salad Dressing: the general rule is 1 part acid (lemon juice / vinegar) to 3 parts oil

+          sprinkle in 1 tsp jar of flavour for added personality

+          melt and use 2 tbsp flavoured butter / marg to the oil component


Easy Salad : grab a platter and add your dressing.

  • Make my crunchy garlic crumb, by melting some flavoured marg in a pan and add some ripped breadcrumbs. Fry until crunchy, remove from heat.
  • Wash and chop up some kale, lettuce, spinach and drop into the dressing
  • Grate some carrot, chop some tomatoes and add to the salad
  • Add cheese or whatever you like on top. Mix well then sprinkle over the bread crumbs.
